Air drying is not the same as sun drying. Air-drying has requirements on temperature and humidity and needs to be carried out in a low-temperature and low-humidity environment. The cold-wind drying room simulates the natural air-drying environment in winter to dry the fish.

The cold air drying room is also called a cold air dehydrator. It uses low-temperature and low-humidity air to forcefully circulate in the food room to gradually reduce the moisture content of the food and achieve the purpose of drying. Using the low-temperature heat pump recovery principle, the drying results achieve natural air-drying quality. The cold air dryer forces air at a low temperature of 5-40 degrees to circulate on the surface of the fish. Since the partial pressure of water vapor on the surface of the fish is different from that of the low-temperature and low-humidity air, the water in the fish continues to evaporate and the low-humidity air reaches saturation. It is then dehumidified and heated by the evaporator and becomes dry air. The process cycles repeatedly, and finally the fish becomes dried fish.
