Fresh bamboo shoots have a high water content, so they need to be cut, steamed, and pressed before drying.
1. Selection: Cut off the aging part of the tail of the bamboo shoots, peel off the shell, cut in half, and then wash.
2. Steaming and rinsing: Boil the processed bamboo shoots for 2 to 3 hours. The standard is that the bamboo shoots turn jade white and become soft. You can insert an iron rod into the internodes of the bamboo shoots for inspection. (Note that the water should be changed every 2 to 3 pots, otherwise the dried bamboo shoots will change color easily, reducing the quality and value); rinse with cold water and dry the surface moisture.
3. Pressing: Place the bamboo shoots flat in the press until the squeezed water is foamy and slightly red.
3. Drying: Place the steamed and pressed bamboo shoots and push them into the drying room. The qualified standard for bamboo shoots after drying is bright color, golden yellow, and fragrant. Generally speaking, the drying time of spring bamboo shoots is about 8-10 hours. The humidity should be controlled at around 10%-15%, and the temperature should be controlled between 50℃-60℃. High temperature will cause the skin of the spring bamboo shoots to harden, and low temperature will increase the drying time.
