Peanuts are a common and popular nut. Peanuts contain 25% to 35% protein, mainly water-soluble protein and salt-soluble protein. Peanuts contain choline and lecithin, which are rare in general grains. They can promote human metabolism, improve memory, enhance intelligence, resist aging, and prolong life. The traditional drying process for boiled peanuts is generally sun drying, which has a long cycle, high climate requirements, high labor intensity, and is not suitable for large-scale processing.

Peanut processing process:

1. Cleaning: There is a lot of mud on the surface of fresh peanuts. Soak the peanuts with mud in water for 30 minutes, and then wash them repeatedly with your hands. When the mud is almost gone, pick them up with your hands and put them in another bowl of water. Continue to add water, continue to scrub, then take them out, add salt or starch and continue to scrub until there is no mud or sand sediment on the peanuts.

2. Soaking: Wash the peanuts, pinch open the peanuts and soak them in salt water for more than 8 hours before cooking. This will allow the salt water to penetrate into the peanuts and soften the peanut shells. When cooked in salt water, the peanut kernels will be easier to absorb the flavor.

3. Cook with salt: Put the peanuts in a pot, add water to cover the peanuts, add appropriate amount of salt, bring to a boil over high heat, then turn to low heat and cook for 2 hours. During this period, turn the peanuts frequently to make sure they are fully cooked. After the peanuts are cooked, do not rush to take them out, but continue to simmer for half an hour.

4. Drying: Take out the cooked peanuts with salt and drain them. Arrange the peanuts on the baking tray in order, put the baking tray filled with peanuts into the material cart and push it into the drying room to start the drying process.

5. The parameters for drying peanuts in the dried fruit dryer are as follows:

Phase 1: The drying temperature is set to 40-45℃, the drying time is set to 3 hours, and moisture is continuously removed;
Phase 2: Heat to 50-55℃, dry for about 5 hours, and control the moisture removal time;
Phase 3: After the first two stages of drying, the drying degree of peanuts reaches 50%-60%, the temperature can be raised to 60-70℃, and the peanuts can be pushed out of the drying room when the moisture content of the peanuts is 12-18%.
